Shochu is a distilled spirit made from rice in combination with another flavor-influencing ingredient . At SAKAYA, we carry a limited selection of unusual, high quality shochu made from imo (sweet potato), mugi (barley), kome (all rice), as well as the distinctive version made in Okinawa from Thai rice called Awamori. Shochu flavors and aromas are reminiscent of lighter single malt scotches. It can be drunk neat, on- the- rocks, or “oyuwari” (with a bit of warm water), the style enjoyed in Kagoshima-ken, the prefecture where most of it originates. And because it has a lower alcohol level (than most spirits) of about 25%, it pairs well with heartier food. |
